Coconut water is not only a refreshing drink, it has many Nutritional benefits and contains organic compounds like

46 calories and 2 grams of protein. The sodium content is
surprisingly high with 252 mg. and so is the fiber at 3 grams. The
total fat is exceptionally low at 0.5 grams with 0.4 grams
saturated. It contains a full range of B vitamins with the exception
of vitamin B6 and B12. There are 6.00 mcg of folic acid and 5.8 mg
of vitamin C. Rating the minerals, 1 cup contains 57.6 mg of
calcium, 0.7 mg. of iron, 60 mg of magnesium, 600 mg of potassium,
and 0.2 mg of zinc.

Coconut water when exposed to the air will rapidly
lose most of its organoleptic and nutritional characteristics and
will begins to ferment. Some manufacturer use high temperature
pasteurization, UHT but it has a disadvantage. It will not only
eliminate the risk of bacteria such as E-coli but also several
nutrients and almost the whole coconut water delicate flavor.
Our quality standards guarantee that the fresh
coconut water is processed within 3 hours after exposure to the air.
The Coconut concentrate is then fast chilled and stored at -20
degree Celsius

Shelf
life
The coconut water once unfrozen should be consumed
rapidly, it has a shelf life from 10 days to 3 weeks and must be
maintained refrigerated below 4 degrees Celsius.
Frozen the coconut water duration of preservation is
less than one year and it must be bottled or repacked UHT which will
allow a longer shelf life from 6 to 12 months at room temperature
